OLD-FASHIONED PEA SOUP

PORK AND BEANS

Fèves au lard
(12 PORTIONS)

   INGREDIENTS:

  • 750 ml (3 cups) peas for soup
  • Cold water
  • 1 to 3 slices of Lafleur bacon, chopped
  • 125 ml (1/2 cup) onions, diced
  • 3,4 l (14 cups) water
  • 20 ml (4 teaspoons) salted herbs
  • 250 ml (1 cup) carrots, diced
  • Salt, pepper and sugar to taste
INGREDIENTS:
  • 550 ml (2 1/4 cups) white beans
  • 60 ml   (1/4 cup) salted pork, diced
  • 125 ml (1/2 cup) onion, minced
  • Salt and pepper to taste
  • 5 ml (1 teaspoon) dry mustard
  • 125 ml (1/2 cup) brown sugar
  • 75 ml (1/3 cup) molasses

PREPARATION:

Wash peas and soak them in water for about 12 hours.
Melt bacon on low heat.
Drop onions in bacon fat; moisten with water.
Add peas, herbs and carrots. Season.
Simmer for 3 hours.


PREPARATION:

Soak beans in water overnight. Throw away the water. Sauté diced pork until golden. Add onions to the pork fat and cook lightly. Add drained beans. Cover and cook in the oven at 120° C (250° F) during 4 to 6 hours. Thirty minutes before the end of cooking, remove cover to color.
